Ingredients

  • 200 g lamb`s lettuce
  • 2 tablespoon sugar
  • some water
  • 50 g walnuts, halves
  • 1 small onion (s), red
  • 1 large apple, sour
  • 5 tablespoon white wine vinegar
  • 5 tablespoon walnut oil
  • salt and pepper
  • 2 tablespoon lemon juice
  • 400 g chicken breast fillet (s)

Instructions

  1. Put the sugar in a saucepan and add enough water to just cover it. Let it caramelize. Mix in the walnut halves and leave to cool on a plate.
  2. Clean, wash and spin dry the lamb`s lettuce. Peel and finely dice the onion.
  3. Halve the apple, remove the core and grate one half finely. Mix with the onions, vinegar and walnut oil and season with salt and pepper.
  4. Cut the second half of the apple into fine wedges. Drizzle with the lemon juice.
  5. Rinse the chicken breasts with cold water, pat dry and season with salt and pepper. Fry in a large pan in hot oil for 5 minutes on each side, possibly let it simmer in the oven at 80 ° C. Slice.
  6. Serve the salad with the meat, spread the dressing over it and garnish with the apple wedges and walnuts.
  7. Tastes great as a starter or as a small dish for 2 people.
