Ingredients
- 1 packet glass noodles
- 400 g chicken breast
- 1 small broccoli
- 2 medium bell pepper (s), red
- 2 handfuls bean sprouts, fresh
- 1 large onion (s)
- 50 ml soy sauce, rather sweet
- 2 tablespoon curry paste, red
- 1 chilli pepper (s), depending on the heat required
- a bit salt
- some curry powder
- some cumin powder
- 1 clove garlic

- I use a medium-sized package of glass noodles.
- Wash the chicken breast, pat dry and cut into bite-sized pieces and fry in a little oil on a very high level, so that roasted substances are created but the inside is not yet done. Take out of the pan and set aside.
- Wash the vegetables and cut them again into bite-sized pieces. Heat some oil in a pan and fry the onions, peppers and broccoli. When the vegetables have turned a little roasted color, add curry paste, chilli, cumin and curry and fry for 1 - 2 minutes so that the aromas can release their taste. Deglaze with soy sauce. Finely chop the garlic and add to the vegetables.
- Wash the bean sprouts and add them to the pan. If necessary, add some liquid (water, vegetable broth or a little more soy sauce, depending on your taste).
- The prepared meat is then mixed with the vegetables and soaked in the pan for about 2 - 3 minutes.
- Boil and drain the glass noodles 5 minutes before the food is ready to serve. Mix with the meat and vegetables in the pan and season again with salt and the other spices.
- Tip: Sweet and sour sauce tastes good with it, but that is a matter of taste.
