Ingredients

  • 500 ml apple juice
  • 3 sticks cinnamon
  • 5 carnation (s)

  • 10 black peppercorns
  • 4 leg (s), (goose legs)
  • 4 tablespoon calvados
  • 400 ml poultry stock
  • salt and pepper
  • Sauce thickener
  • thyme

Instructions

  1. Bring the ingredients for the marinade to the boil and allow to cool.
  2. Wash and dab the legs. Pour the marinade over it and let it steep overnight.
  3. Then take out the legs and pat dry. Sieve and collect the marinade. Season the leg with salt, pepper and thyme, place on a tray and bake at 200 ° for 1 1/2 hours.
  4. Gradually pour in the marinade and poultry stock. Take out the legs and keep them warm.
  5. Pour the stock into a saucepan and skim off the fat. Bring the sauce to the boil, stir in the calvados, thicken with a sauce thickener and season to taste.
