- 2 tablespoon almond (s), diced
- 4 grapefruit (s), pink
- 250 g mascarpone
- 1 packet vanilla sugar
- 1 tablespoon powdered sugar
- 2 tablespoon amaretto
- 1 meringue bowl
- Lemon balm for garnish

- Roast the almond sticks in a pan without fat, leave to cool. Peel the grapefruits thickly and remove the fillets from the skins, collecting the dripping juice. Mix the mascarpone with the vanilla sugar, sifted powdered sugar, amaretto and grapefruit juice.
- Break the meringue into pieces. Serve the grapefruit fillets with the mascarpone cream, sprinkle with the almond sticks and meringue pieces. Serve garnished with lemon balm.
