Ingredients

  • 4 large potatoes, waxy
  • 40 g butter, soft
  • 1 tablespoon grappa
  • Oil (olive oil)
  • nutmeg
  • salt and pepper
  • Parmesan
  • Caraway seed

Instructions

  1. Wrap the washed potatoes individually and with a little caraway in aluminum (shiny side inside) and cook in the oven for approx. 1 1/2-2 hours, depending on the size, at 200 degrees. Remove foil, halve 2 potatoes lengthways and hollow out. Be careful not to damage the shell.
  2. Peel the remaining 2 potatoes and mash them well with the hollowed out potato pieces or press them through the press. Mix the mixture with a little olive oil and the soft butter, season with salt, pepper and add a touch of nutmeg. Grappa with it. Fill the 4 hollowed out potato halves with it and sprinkle with freshly grated Parmesan or old Gouda cheese and bake on top heat and about 180 degrees until golden yellow.
  3. As an accompaniment to meat, vegetables or just like that.
