Ingredients

  • 180 g Mie noodles
  • 0.5 ½ mango (s)
  • 500 g asparaus, reen
  • some peanut oil or neutral oil
  • 2 shallot (s), diced
  • 2 clove (s) garlic, finely diced
  • some ginger, peeled, grated
  • some chilli pepper (s), without seeds, amount depending on heat and taste
  • 2 tablespoon rice wine
  • 4 tablespoon sweet chili sauce
  • 2 tablespoon soy sauce
  • some lime juice
  • pepper
  • 2 spring onion (s), the green one
  • 150 g shrimp (s), raw

Instructions

  1. Cook the Mie noodles according to the instructions on the packet and let them drain well.
  2. Peel the mango, cut the flesh from the core, dice. Wash the asparagus, peel the lower third and cut diagonally into pieces approx. 2 cm in size.
  3. Heat some peanut oil in a pan, fry the asparagus over medium heat for about five minutes, turning. Add the shallots and cook for another five minutes over low heat. Then add garlic, chilli and ginger and sauté briefly. Add the Mie noodles, rice wine, sweet chilli sauce and soy sauce, heat. Finally add the mango cubes, heat them up briefly, season with soy sauce, pepper and lime juice.
  4. At the same time, fry the prawns in a separate pan. Cut the green of the spring onions diagonally into narrow pieces.
  5. Sprinkle the vegetable and noodle mixture with spring onions and serve with the prawns.
