Ingredients

Malt cake:

  • 5 eggs
  • 250 grams of sugar
  • 1 pinch of salt
  • 1 teaspoon vanilla extract
  • 250 g Guinness or malt beer
  • 100 g sunflower oil
  • 150 g natural yogurt (3.5%)
  • 280 g flour
  • 2.5 tsp baking powder
  • 100 g cocoa
  • 170 g almonds

Base cream:

  • 250 g butter (soft)
  • 1 teaspoon vanilla extract
  • 150 g powdered sugar
  • 450 g cream cheese

Strawberry cream (frozen):

  • 500 g strawberries (frozen)
  • 1 tablespoon of lemon juice

Green cream:

  • 5 Drops of food coloring paste green

Instructions

  1. Preheat the oven to 170 ° CO / U heat, wrap a size 26 baking ring in baking paper and place it on a perforated sheet.

Malt cake

  1. Beat the eggs together with the sugar, salt and vanilla extract for 5-8 minutes until creamy white. In the meantime, finely grind the almonds. Then fold in the (malt) beer, sunflower oil and natural yogurt. Mix the flour with the baking powder and cocoa and fold it into the egg mixture along with the almonds. Be careful not to stir the dough for too long, otherwise it will become greasy and lose volume.
  2. Pour the dough into the prepared baking ring and brush it lightly up the edge - so it will bake even more evenly later.
  3. Bake the cake in the preheated oven for 35-40 minutes.
  4. Take it out of the oven and let it cool completely.

Cream

  1. Let the strawberries thaw and cook them with the lemon juice until there is almost no liquid left. Then let the mixture cool down completely.
  2. Mix the softened butter with the powdered sugar and the vanilla extract for 3-4 minutes until creamy white. Then add the cream cheese and stir the cream until smooth. Put about 100 g of the cream in a separate bowl and mix it with the food coloring until it is a nice light green color. Fill the cream into a piping bag with a fine perforated nozzle and put it in the refrigerator.
  3. Mix the remaining white cream with the cold strawberry puree.

Assemble the cake

  1. Remove the base from the cake ring and then cut it horizontally twice.
  2. Place the first cake base on a cake saver. Now spread a third of the cream on the floor. Now put on the next base and fill the entire cake. Do not smooth the outside completely, but rather irregularly. It can have a few rough edges.
  3. Finally, write “happee birthdae harry” on it with the green cream. Finally, use a palette to draw the typical crack in the surface of the cake and serve it.

Recipe Notes

The dough consists of a malt beer chocolate cake (non-alcoholic - based on the "butter beer"). The cream is a simple American filling made with butter, powdered sugar and cream cheese. This base cream serves both as a filling combined with preserved strawberries, but also as a green label on the cake / Harry Potter birthday cake.
