Ingredients
- 2 cheeses (Harz cheese, sour milk cheese, hand cheese)
- 6 tomato (s) or 4 beefsteak tomatoes
- 1 bunch spring onion (s)
- 1 glass pickled cucumber (approx. 450 ml) or mustard cucumber (approx. 450 ml)
- 1 tablespoon olive oil
- 3 tablespoon vinegar (apple cider vinegar)
- 1 teaspoon mustard
- salt and pepper
- Caraway seed

- Mix a marinade from oil, vinegar, mustard, salt, pepper and caraway seeds.
- Cut the tomatoes into small cubes, add to the marinade and mix well. Possibly add a little more cucumber water. Cut the spring onions into rings and mix with the tomatoes. Cut the cucumber into slices or cubes and mix in as well.
- Now cut the Harz cheese into approx. 1 - 1.5 cm large cubes and distribute well (otherwise it will stick together). Mix well with the other salad ingredients and let everything stand for about 1 hour.
- A crispy farmer`s bread goes well with it.
