Mix the freshly ground hazelnuts (please do not buy ground nuts!) With sugar and vanilla sugar. Beat the egg white until stiff and carefully pour in the hazelnut-sugar mixture and fold in.
Cover 1 - 2 baking sheets with baking paper.
Shape the dough into small, walnut-sized balls with damp hands and place on the baking tray. If the mixture is too thin, let it swell a little first, if necessary mix in more ground nuts. Place a hazelnut kernel on each pile and bake for 10-12 minutes.
The piles must feel dry on the outside, but should still be soft on the inside. Do not let them get too dark, otherwise they will taste bitter.
