Healthy Pancakes with Strawberry Sauce

Ingredients

  • Whole grain flour (dark) – 1 glass
  • Corn flour – 1/3 cup
  • Instant oat flakes like Hercules – 1/3 cup
  • Fresh strawberries (sliced) – 3 cups
  • Rhubarb (cut into strips) – 1 cup
  • Brown sugar – 2 tbsp
  • Baking powder – 1 1/2 teaspoon
  • Milk – 1 glass
  • Egg – 1 pc.
  • Salt – 1/4 teaspoon.
  • Odorless vegetable oil – 2 tbsp
  • Vegetable oil for greasing the pan
  • White sugar – 1 tbsp
  • Vanilla extract – 1 teaspoon

Directions

  1. In a medium bowl, combine all the flour, oatmeal, brown sugar, baking powder, and salt, slide together and make a depression in the center. Leave aside.
  2. In a small bowl, lightly beat the egg, milk, and 2 tablespoons of oil. Introduce this mass into the groove in the flour, mix well.
  3. Lightly grease a large non-stick skillet and heat over medium heat to high heat. Pour the dough into the skillet (about 1/4 cup for each pancake). The pancakes should be about 7-8 cm in diameter. Fry for about 2 minutes on each side, until golden brown.
  4. Prepare the sauce. Place 2 cups of strawberries, rhubarb, white sugar, and vanilla extract into the bowl of a kitchen processor or blender, pulsate until smooth. Pour the sauce into a small saucepan and heat over medium heat, then add the remaining 1 cup strawberries.
  5. Serve the pancakes with strawberry sauce.
