Ingredients

  • 8 herring fillet (s)
  • 0.25 liter ¼ mineral water or milk, possibly
  • 2 apples
  • 2 onions)
  • 3 pickled cucumber (s)
  • 200 g cream
  • 200 g sour cream
  • 2 tablespoon mayonnaise
  • 2 tablespoon cucumber liquid
  • 1 teaspoon sugar
  • pepper from the grinder
  • dill

Instructions

  1. Rinse the matjes fillets briefly under running water. Try a piece of the fish, if it is still too salty, place the fillets in a bowl with mineral water or milk for about 30 minutes.
  2. Mix the cream, sour cream, mayonnaise and the cucumber water into a sauce and season with sugar and freshly ground pepper. Salt is usually not necessary as the fish still releases enough salt into the sauce. Wash, peel and core the apples and cut into thin slices like the pickles. Peel the onion, cut into fine rings and add to the sauce with the apple and cucumber slices.
  3. Then fold in the matjes fillets and let everything sit in the refrigerator for another 2 hours. Garnish with dill before serving.
  4. Serve with jacket potatoes or a strong wholemeal bread.
