Instructions

  1. Chop garlic, paprika, onions and tomatoes into small pieces; Eight tomatoes.
  2. Meanwhile, heat the olive oil in a (clay) pan. Add the vegetables. Let simmer while stirring. Simmer on a low flame for about 30 minutes. The vegetables should draw water. Season with cumin, salt and pepper. Use 2 pan lifters to push the vegetables apart and beat an egg into the free space. Repeat with the remaining 2 eggs. Let it stall.
  3. If you like, you can also add minced meatballs to the pan, or instead of seasoning with cumin, add peppers and season with chili pepper. You can thicken the pan with tomato paste or harissa.
  4. Serve with white bread to dip.
