Ingredients

  • 4 large egg (s), fresh, room temperature
  • 1 large potato (s), boiled, peeled and mashed
  • 20 g butter, for fryin
  • 1 tablespoon chives rolls
  • some lemon juice
  • some black pepper from the mill
  • a bit salt

Instructions

  1. Separate the eggs, mix the yolks with the potatoes, chives, lemon juice, salt and pepper well. Beat the egg white and fold in carefully.
  2. Heat the butter in a large, fireproof pan and fry the egg mixture over a medium flame for about 4 minutes until golden brown. Let it briefly turn golden brown under a top heat grill.
  3. Serve hot.
