- 1 cucumber (s)
- 2 large beefsteak tomato (s)
- 2 spring onion (s) (or 1 white onion)
- pepper
- salt
- oil
- a lot basil, fresher, chopped

- Peel the cucumber, cut into thin slices, sprinkle with salt and let it steep for about half an hour.
- Then pour off the liquid from the cucumber. Lay out the cucumber on a platter. Eight tomatoes and place around the cucumber slices. Scatter thin onion slices over the top. Season the tomatoes with salt and pepper. Pour oil over the whole thing and sprinkle with the chopped basil.
