Jerky Beef

Another delicious recipe for jerky is beef with spices, which are used to make carpaccio and give the meat a special taste.

Cook: 3 days

Ingredients

  • Beef, pulp – 1 kg
  • Salt – 4 teaspoon
  • Sugar – 2 teaspoon
  • Coriander – 4 teaspoon
  • Dry garlic – 4 teaspoon (20 g)
  • A mixture of ground peppers – 2 teaspoon.
  • Ground paprika – 5 teaspoon (25 g)
  • Ground cayenne pepper – 2-4 teaspoon (taste)
  • A mixture of Italian herbs (basil, oregano) – 2 teaspoon

Choose your meat carefully! Since today it is difficult to find quality meat in which you can be 100% sure, it is recommended to use salted or fried meat. Raw meat can only be used if its quality and origin are known for certain.

How to cook beef jerky (beef basturma):

Directions

  1. First, you need to prepare the spice mixture. To do this, combine 4 teaspoons of salt, 2 teaspoons of sugar, and 4 teaspoons of coriander. Mash a little with a crush, for more flavor transfer to the meat. Add 4 teaspoons of dry garlic there (it is better not to replace it with fresh garlic), 4 teaspoons of ground pepper, 5 teaspoons of paprika, 2 teaspoons of cayenne pepper (if you like it sharper, then add 4 teaspoons), 2 teaspoons, Italian herbs (basil and oregano). Mix everything thoroughly.
  2. Beef should be taken without fat and with a small number of veins. Wash the meat, dry it and cut it into long strips 5 cm wide and no more than 3 cm thick.
  3. The meat must be well rolled in the prepared spice mixture, put in a bowl, and sprinkled with spices. Then press down on top with a press and leave for 4 hours, no more.
  4. After that, each piece of beef is strung on a thread (wire) and hung to dry for 3 days in a ventilated room at a temperature of 5 degrees. I dried meat in the refrigerator. In this case, you need to install forced ventilation, such as a USB fan. To remove excess moisture, put a bowl with 2 kg of salt in the refrigerator (if you have a refrigerator with the “No Frost” system, you can do it without salt). If there is no air circulation in the refrigerator, the meat will dry for 3 weeks.
  5. Store ready-made beef jerky in the refrigerator, and for long-term storage place the jerky meat in the freezer.
