Juicy Zucchini Meatballs

Zucchini meatballs are delicious on their own. They are tender, juicy, appetizing and low in calories. They are very satisfying and easy to prepare.

Ingredients

  • Zucchini – 500 g
  • Boiled rice – 3 tbsp
  • Chicken egg – 1 pc.
  • Hard cheese – 30 g
  • Green onion – 5 stalks
  • Parsley – 5 sprigs
  • Flour – 1 tbsp
  • Bread crumbs – 5 tbsp
  • Spices to taste
  • Vegetable oil (for frying) – 5 tbsp

Directions

  1. Prepare the required foods.
  2. Wash green onions and chop finely.
  3. Trim the parsley stalks and finely chop the leaves.
  4. Wash the zucchini, cut off the tails and grate on a coarse grater.
  5. Salt the zucchini and let it stand for 5-10 minutes to let the juice flow. Then you need to drain the juice, and squeeze the grated zucchini.
  6. Add boiled rice and chicken egg to a bowl with squeezed zucchini.
  7. Add a little grated cheese (we leave part of the cheese for serving the finished dish), chopped onions and parsley. Add flour, spices and mix well.
  8. If the prepared mixture is liquid, you can add a spoonful of flour.
  9. I try it on spices. If they are not enough, I add.
  10. Pour vegetable oil into a frying pan. While the oil is warming up, take a portion of the prepared mixture with a tablespoon, form a ball and roll it in bread crumbs, then shape the ball.
  11. Put the meatballs in hot oil.
  12. Fry the squash balls in a pan on both sides until golden brown.
  13. I put the finished zucchini meatballs on a dish, serve sour cream, vegetables to them, sprinkle with grated cheese.
