Ingredients
- 3 cucumber (s), approx. 700 g
- 3 zucchini, approx. 700 g
- 3 chilli pepper (s), green
- 2 tablespoon peppermint, dried
- 1 teaspoon basil, dried
- 1 lemon (s), organic
- 1 bay leaf
- 1 teaspoon sugar, raw
- 1 teaspoon onion (s), dried
- 1 teaspoon garlic, dried
- 2 teaspoons black pepper
- 2 teaspoons salt
- 2 teaspoons fish sauce
- 2 tablespoon maple syrup
- 100 ml vinegar
- 100 ml water
- 1 pinch (s) allspice

- Cut the zucchini, cucumber and chillies into small pieces. Finely grate the peel of the lemon and then squeeze the lemon.
- Put all ingredients in a deep saucepan and simmer for 1 hour. Remove the bay leaf and puree everything. Simmer for another 30 minutes and then pour into glasses. Goes well with BBQ and white meat.
