Ingredients

  • 6 egg yolks
  • 4 egg whites
  • 40 g powdered suar
  • 100 g suar
  • 120 grams flour
  • vanilla sugar for dusting
  • Icing sugar for dusting

Instructions

  1. Preheat the oven to 160 ° C.
  2. Beat the egg yolks and icing sugar with the whisk of a hand mixer or a food processor until thick and foamy. Beat the egg whites very stiffly, pour in the sugar and keep beating until the snow is firm and shiny. Pile the egg whites on top of the foam mass, sieve the flour over it and mix everything evenly and loosely.
  3. Line a baking sheet with parchment paper. Fill the biscuit mixture into a piping bag with a smooth, large perforated nozzle. Spray about 6 - 8 cm long strips on each of them with sufficient distance. Put the vanilla sugar and powdered sugar in a sieve and sprinkle the sponge fingers with them.
  4. Bake in the hot oven, with the oven door slightly open, on the middle rack for about 8-10 minutes.
  5. Immediately remove from the paper with a palette and bake the remaining dough in portions.
