Lasagna is delicious, but real Italian lasagna takes a lot of time and a certain set of ingredients. Today I will show you how to make thin pita lasagna with minced meat, mushrooms and cheese, and sour cream instead of the traditional sauce. This recipe, of course, differs from the classic one, but a simple lavash lasagne will turn out to be no less tasty!

Ingredients
Thin lavash – 2 pcs. (160 g each)
Minced pork (or pork and beef) – 400 g
Bulb onions – 1 pc.
Tomato (large) – 1 pc.
Champignons – 150 g
Hard cheese – 100 g
Sour cream – 150 g
Sunflower oil – 50 ml
A mixture of dry Italian herbs – 1 teaspoon
Salt to taste
Ground black pepper – to taste
Directions
Prepare food. I have ready-made minced meat, but you can cook the minced meat yourself bypassing the meat through a meat grinder. Peel and cut onions into cubes.
Heat half of the sunflower oil in a skillet. Place the minced meat and onions in the skillet. Fry the minced meat with onions over high heat for 7-10 minutes. Season with salt and pepper. Stir frequently the minced meat with onions during frying. Transfer the sautéed minced meat to a bowl.
Remove the skin from the champignon caps, cut the mushrooms into slices. Wash the tomato, cut the stalk. Cut the tomato into slices. Pour the remaining sunflower oil into the pan where the minced meat was just fried, heat it, and put the mushrooms. Fry the mushrooms over high heat for a couple of minutes.
Add tomatoes to mushrooms, add salt, black pepper, and a mixture of dry Italian herbs. Continue to fry the mushrooms and tomatoes for about 7 minutes, stirring occasionally, until enough liquid has evaporated and the sauce is thick enough. Remove skillet from heat.
Cut each sheet of pita bread into 4 pieces. Turn on the oven, let it heat up to 180 degrees. Take a rectangular baking dish (my baking dish is 22×30 cm). Place two sheets of pita bread on the bottom of the mold.
Put half of the fried minced meat with onions on the pita bread. Grate the cheese on a fine grater and divide it into 4 approximately equal parts. Sprinkle the minced meat and onion with some of the cheese. Cover the meat layer with two more sheets of pita bread.
Put all the tomato-mushroom filling on the pita bread, spreading it evenly over the entire area. Sprinkle with cheese. Layout two sheets of pita bread again. Top with the remaining minced meat, which also sprinkles with cheese. And layout the last sheets of pita bread.
Spread sour cream liberally over the surface of the lasagna. Sprinkle with the remaining grated cheese. Bake the lavash lasagna in an oven preheated to 180 degrees for about 25-30 minutes.
Lavash lasagna with minced meat and mushrooms is ready! Serve hot and cut into portions.
