Ingredients

  • 2 egg (s)
  • 90 g cane suar
  • 120 g butter, soft
  • 190 g flour
  • 110 ml milk
  • 2 teaspoons baking soda
  • 1 pinch (s) salt
  • 3 teaspoons lemon juice
  • some lemon peel, grated
  • 100 g butter, soft
  • 100 g powdered suar, (powdered suar)
  • 110 g cream cheese

Instructions

  1. For 12 pieces.
  2. Beat the butter until foamy and then add the sugar. Add one egg at a time, stirring constantly. Add the flour, baking powder and lemon juice and finally let the milk run in slowly. Pour the batter into prepared cupcake molds.
  3. If you like the dough more lemony, stir in some grated lemon zest (like me).
  4. Bake in a hot oven at 175ºC for approx. 20 minutes.
  5. My favorite thing is the lemon cupcakes with a cream cheese frosting topping. To do this, I mix the soft butter with the icing sugar and then add the cream cheese (it works best with Philadelphia, then the frosting will be nice and firm and you can squirt it well).
  6. Tip: I make the dough mixture in the Thermomix. I put all the ingredients in the pot at once, then set it to level 7 for about 2 minutes, that`s it. The cupcakes will be super fluffy.
