Ingredients

  • 50 g butter
  • 250 g quark (curd cheese or brimsen)
  • 0.5 ½ onion (s), very finely chopped
  • 50 g pickled cucumber (s), very finely chopped
  • 1 ½ tablespoon paprika powder, noble sweet
  • 1 teaspoon mustard
  • 1 teaspoon anchovy paste, optional
  • 1 teaspoon tomato paste, optional
  • 1 teaspoon capers, chopped, optional
  • 1 teaspoon chives, optional
  • 1 pinch chili powder, optional
  • 1 pepperoni, pickled, very finely chopped, optional
  • 0.5 clove ½ (s) garlic, optional
  • salt and pepper

Instructions

  1. Mix the butter and curd well (no lumps of butter should remain in the mixture). Add the finely chopped onion, pickles and mustard and mix everything well.
  2. Now gradually add the paprika powder until the mixture is really nice and orange.
  3. The optional ingredients can be added according to personal taste.
  4. Season to taste with salt and pepper.
  5. The original Liptauer is made in Austria with Brimsen. This is cream cheese made from sheep`s milk. Since you don`t always get it, you usually use curd cheese.
  6. Liptauer is a traditional spread that you get at every Heuriger (wine bar), whereby each Heuriger has its own house recipe.
  7. Tastes good with pretzels, black bread and as a dip for savory biscuits and pretzel sticks.
