Ingredients
- 0.5 ½ pumpkin (se) (Hokkaido)
- 1 bunch rocket
- 15 basil leaves
- 100 g oat cream cheese - thaler
- 3 tablespoon syrup (agave syrup) or maple syrup
- 3 tablespoon honey (chestnut honey)
- 2 teaspoons mustard, medium hot
- 1 teaspoon paprika powder, hot pink
- Lemon juice
- Vinegar (walnut vinegar)
- olive oil
- Oil (hazelnut oil)
- Pepper, whiter

- Preheat the oven to 225 ° C. Core the pumpkin, cut into 1/2 cm thick wedges. Spread the pumpkin slices on a baking sheet lined with baking paper (possibly still oiled), bake on the second lowest rack for 10 minutes. Stir the marinade of paprika powder, half of the honey / agave syrup or maple syrup and 1 tablespoon olive oil, brush the columns with it, bake for another 10-15 minutes.
- In the meantime, clean the rocket, wash and spin dry. Wash basil. Cut the cream cheese thaler into smaller pieces.
- Mix the remaining honey, lemon juice, mustard, walnut vinegar, olive oil and hazelnut oil as required as well as salt and pepper into a vinaigrette.
- Take the pumpkin out of the oven, divide it between two plates, place the rocket, basil and cheese on top. Drizzle with the vinaigrette.
- Choose between fried bacon strips, fried chanterelles, fried veal or poultry strips on top, serve.
- With flatbread and the last rosé of summer.
