Ingredients
- 1 teaspoon thyme
- 3 tablespoon oil, cold-pressed olive oil
- Pepper, black, freshly ground
- 6 goat cream cheese, round 40 g each (e.g. Picandou)
- 300 g rocket
- 4 tablespoon vinegar (white wine vinegar)
- 4 tablespoon oil (walnut oil)
- salt
- 1 teaspoon mustard (Dijon mustard)
- 1 teaspoon honey
- 60 g pine nuts

- Chop the thyme, mix with oil and a little pepper. Drizzle the goat cheese with it and cover it and leave to marinate overnight.
- Wash the lettuce. Mix a dressing from vinegar, oil, salt, mustard and honey, season to taste. Toast the pine nuts in a pan without fat.
- Just before serving, mix the salad with the dressing and distribute on plates.
- Fry the goat cheese in a pan for 1 minute on each side. Distribute on the salads and serve at the end sprinkled with the pine nuts.
