Lush and Soft Hamburger Buns

Lush and soft hamburger buns. The recipe does not use milk, the yeast dough is cooked in water, the buns are airy and very tasty. For me this is just the perfect bun dough.

Cook: 3 hours 40 minutes

Ingredients

  • Flour – 500 g
  • Warm water – 250 ml
  • Eggs – 1 pc.
  • Butter – 40 g
  • Live yeast – 20 g
  • or dry yeast – 7 g
  • Salt – 1 teaspoon
  • Sugar – 3 tbsp
  • Turmeric – ½ teaspoon

Additionally:

  • Yolk – 1 pc.
  • Milk – 1 tbsp
  • Sesame (for decoration) – to taste

Directions

  1. Crumble yeast, add 1 tbsp sugar, 3 tbsp flour, add 250 ml of warm water (not higher than 40 degrees) and stir well.
  2. Leave to rise in a warm place for 30 minutes.
  3. Add turmeric to the matched dough for a pleasant yellow bun, 1 egg at room temperature (it is better to get it out of the refrigerator in advance), 1 teaspoon. a spoonful of salt, 2 tbsp sugar, 40 g soft butter. Mix all ingredients.
  4. Sift flour gradually.
  5. Knead the dough, it should be very soft, not sticky to your hands. (Be sure not to add too much flour, otherwise it may clog it, it will be dense and hard.)
  6. Cover the dough with a film or a towel and let it come up and increase at least 1.5-2 times in volume.
  7. Grease the working surface with vegetable oil, move the dough, knead it a little, divide it into parts. (This amount of dough yields 8 buns, each weighing 118 g.) Form each part into a bun by turning the edges inward to form a smooth top of the bun.
  8. Put the buns on a baking sheet lined with parchment, and again leave for proofing for 30-40 minutes. (I usually put it in an oven preheated to 50 degrees and then turned off.)
  9. Grease 1 rolls with yolk and 1 tbsp milk. Sprinkle sesame seeds on top.
  10. Bake yeast buns in the oven for 20-25 minutes at 160-180 degrees.
  11. Sprinkle hot rolls with water and cover with a towel until they cool.
  12. These buns are perfect for breakfast, homemade burgers, fishburgers, cheeseburgers and other fast food.
  13. If you have some buns left and they won’t be swept away in a flash, store the buns in a plastic bag to keep them soft for longer.
