Mamalyga in Moldavian

Today we have Moldavian mamalyga for lunch.

Cook: 1 hour 20 minutes

Servings: 4

Ingredients

  • Corn flour – 3 cups
  • Water – 5 glasses
  • Grated cheese – 1 glass
  • Salt – 1 teaspoon
  • Egg – 1 pc.
  • Vegetable oil (or butter) – 30 ml.

Directions

  1. Pour 1 tablespoon into boiling salted water. a spoonful of cornmeal.
  2. When the water boils again, sprinkle the rest of the flour.
  3. Stir.
  4. With vigorous stirring, the hominy is boiled with a wooden spoon on low heat for 35-40 minutes.
  5. At the end of cooking, the hominy should lag behind the sides of the pan.
  6. Rub cheese on a coarse grater.
  7. Grated cheese and butter are added to the finished hominy.
  8. Knead everything well. Allow cooling.
  9. Small dumplings are made with a tablespoon or hands.
  10. Beat the egg. Dumplings are dipped in an egg.
  11. Then roll in breadcrumbs.
  12. Preheat the pan, add oil. Put dumplings in hot oil, fry in a pan over medium heat, first on one side until golden brown (1-2 minutes).
  13. And then turn over and fry on the other side for 1-2 minutes.
  14. Mamalyga in Moldavian is ready.
