Delicate muffins are prepared with the addition of coconut and mango.
Ingredients
Butter (finely chopped) – 180 g
Mango (sliced) – 1 pc.
Coconut flakes – 125 g
Flour – 75 g
Baking powder – 0.5 teaspoon.
Salt – 1/8 teaspoon
Powdered sugar – 225 g
Lime zest – 1 tbsp
Egg whites – 6 pcs.
Directions
Turn on the oven to preheat to 200 degrees. Line 12 muffin molds with paper rosettes.
Melt the butter in a saucepan over low heat, cook for about 1 minute, until golden brown, but not brown. Remove the saucepan from the stove.
In a bowl, combine flour, baking powder, salt, powdered sugar, coconut and lime zest.
In a separate bowl, beat the egg whites until fluffy. Gradually introduce flour mixture and melted butter into proteins, mix gently.
Put the dough into prepared molds, filling them 3/4 full. Top with 1 slice of mango. Place in a preheated oven for 15-18 minutes, until golden brown. Remove the finished muffins from the oven, let cool for 5 minutes, and then remove from the molds, allow to cool completely.
