Ingredients
- 1 mango (s)
- 500 g cherry tomato (s) or bottle tomatoes
- 100 g rocket
- 25 g iner, in one piece
- 2 cloves garlic)
- 2 stalks lemongrass
- 4 tablespoon salad cream (diet) or Miracel Whip
- 2 tablespoon soy sauce, sweet
- Cayenne pepper

- Peel the mango and cut the flesh into wedges or pieces. Wash, clean, halve and cut the tomatoes. Clean and tear the rocket. Put the ingredients in a bowl.
- Peel and finely chop ginger and garlic. Remove the outer leaves from the lemongrass and finely chop the inside. Mix these ingredients with the salad cream, season with soy sauce (if you don`t have sweet soy sauce, you can also use normal soy sauce and add 1-2 teaspoons of sugar) and cayenne pepper. Mix the dressing with the salad ingredients.
- Possible variations: If that`s too vegetarian for you, you can add salmon ham (thinly sliced, cut into strips). If you like, you can also sprinkle the salad with roasted unsalted peanuts.
