Meat Snack Cake with Mushrooms and Pickled Cucumbers

Before the holidays, I tried several recipes for snack cakes! All interesting, beautiful and delicious! But I fell in love with this meat snack cake with mushrooms from the first bite! Cool recipe for a snack cake that will decorate and conquer any festive table! Cook for health!


For cakes:

  • Minced chicken – 700 g
  • Bulb onions – 1 pc.
  • Eggs – 2 pcs.
  • Cream (10%) – 3 tbsp
  • Butter – 1 tbsp
  • Flour – 2 tbsp
  • Salt – 1 teaspoon
  • Ground black pepper – 1 teaspoon
  • Chicken spices – 1 teaspoon
  • Garlic – 1 clove

For the first filling:

  • Champignon mushrooms – 500 g
  • Onions – 2-3 pcs.
  • Mayonnaise – 1-2 tbsp
  • Vegetable oil – for frying
  • Salt to taste
  • Ground black pepper – to taste
  • For the second filling:
  • Pickled cucumbers – 3-4 pcs.
  • Mayonnaise – 1-2 tbsp


  1. We start the preparation of the snack cake with meat cakes. We prepare the necessary products. I have minced chicken.
  2. We turn on the oven to heat up to 180 degrees. Rub the onion on a coarse grater. Combine onion, minced meat, eggs, garlic squeezed through a press, spices, salt, black pepper, melted butter and cream in a large cup. Stir lightly to distribute all ingredients evenly.
  3. Now add flour, mix well. Minced meat is ready!
  4. We divide the finished minced meat into four approximately equal parts. We cover the bottom of a round heat-resistant shape (my dia is 20 cm) with parchment. We spread part of the minced meat in a mold and level it. Cooking meat “cake” in a preheated oven. By time – 15-20 minutes. The juice may stand out, that’s okay. Thus, we prepare 4 minced meat cakes
  5. Now we will prepare products for the first filling – it will be mushroom
  6. Finely chop the onion and fry until light golden brown.
  7. Cut the mushrooms into slices and add to the fried onions. We bring the mushrooms to readiness. The main thing is to evaporate excess moisture from mushrooms. Salt and pepper the ready-made champignons.
  8. We visually divide the champignons into two parts. Grind half of the mushrooms with a blender almost into a paste. Then we combine the pâté with mushrooms in pieces. After cooling, add a spoonful of mayonnaise to hold the filling together and mix. (Mayonnaise can be substituted with curd cheese, whipped cream, melted cheese, aioli sauce, etc.)
  9. The second filling is pickled cucumbers and mayonnaise (1-2 tablespoons)
  10. Rub the cucumbers on a coarse grater. I recommend squeezing them out as they give a lot of liquid. Add mayonnaise, mix.
  11. Divide the mushroom filling in half. We distribute part to the first minced meat cake.
  12. Put the cucumber filling in the center of the snack cake, on the second cake.
  13. Further – one more cake, the second part of the mushroom filling and the last meat cake. Cover the meat cake with a film, put a small load on top (a kitchen board or a plate). Let the snack cake stand for 4-6 hours (you can leave it overnight).
  14. We use our favorite vegetables and curd cheese for decoration.
  15. We cover all the sides and top with curd cheese, level.
  16. Next, using cucumbers, cherry tomatoes, lettuce, green onion, we decorate the snack cake, as fantasy allows!
  17. Cool, delicious snack cake turned out! Very satisfying, although everyone asked for a second bite at once! An interesting recipe, try it!
