Salad with Chicken, Pickled Mushrooms and Cucumbers

Do you want to treat your guests at the festive table with a delicious and hearty salad? Salad with chicken, pickled cucumbers and honey agarics can’t help but please! Here and juicy tender fried chicken, and crispy cucumbers, as well as canned peas and fried carrots and onions, which are in good harmony with pickled honey mushrooms and other components of the salad. Ingredients

  • Chicken fillet – 280 g
  • Pickled cucumbers – 190 g
  • Pickled mushrooms – 150 g
  • Canned green peas – 150 g
  • Carrots – 150 g
  • Onions – 150 g
  • Mayonnaise – 100 g
  • Vegetable oil (for frying) – 40 ml
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Prepare all ingredients. Buy fresh, chilled chicken fillet. Pickled cucumbers are suitable for salad. Do not use pickled cucumbers – they are very sour and will give you a lot of excess juice. Pickled honey mushrooms can be bought at any supermarket. I wash honey mushrooms with cold water and leave for 10-15 minutes to glass the water.
  2. Wash the chicken fillet well and pat dry with a napkin to remove excess moisture. Cut the fillets into thin, oblong pieces.
  3. Heat a little vegetable oil in a frying pan, put the chicken fillet there and fry on moderate heat for 4-5 minutes on each side, until light brown. Put the fried chicken on a plate and cool.
  4. Peel and wash onions. Cut the onion into quarters. Heat some vegetable oil in a skillet. Lay out the onion. Fry over medium heat, stirring with a spatula, about 4-5 minutes, until golden brown. Place the onion on a plate and cool.
  5. Peel and wash the carrots. Dry the carrots with a napkin. Grate with a coarse grater. Send to the pan where the onions were fried. Saute the carrots over medium heat for 4-6 minutes, until soft. Cool to room temperature.
  6. Cut the cooled chicken fillet into cubes.
  7. Blot pickled cucumbers with a marinade napkin. Cut the cucumbers into small pieces.
  8. Put chopped chicken fillet, pickled cucumbers and honey mushrooms in a deep salad bowl. Add canned peas without liquid.
  9. Add sauteed onions and carrots.
  10. Season with salt and pepper to taste. Season the salad with mayonnaise and stir.
  11. Salad with chicken, pickled mushrooms and cucumbers is ready.
