Meatloaf with Bacon and Ricotta

Recipe for making minced turkey roll with Mozzarella cheese, ricotta cheese, Parmesan cheese, onion, parsley, bacon and nutmeg.

Ingredients

  • Minced Turkey – 900 Grams
  • Large eggs – 2 pieces
  • Ricotta – 300 Grams
  • Mozzarella Cheese – 120 Grams
  • Shallots – 2 Pieces
  • Parmesan Cheese – 30 Grams
  • Nutmeg – 1 Pinch
  • Salt – 1/2 Teaspoon
  • Black pepper – 1/4 Teaspoon
  • Bacon – 240 Grams

Directions

  1. Preheat the oven to 190 degrees with the rack in the middle position. Grate the onion. Slice bacon thinly. In a large bowl, combine milk and bread cubes. Set aside for 10 minutes, stirring occasionally.
  2. When the bread is soaked in milk, use a fork to knead it to a puree consistency. Add minced turkey, eggs, ricotta, grated Mozzarella, grated onion, grated Parmesan cheese, chopped parsley, nutmeg, salt and pepper to a bowl of bread. Mix all ingredients by hand until smooth.
  3. Form a roll about 30 cm in length from the resulting mass, put the roll on a baking sheet. Cover the roll with bacon slices on all sides. Cover the roll with aluminum foil.
  4. Bake the roll in the oven for 30 minutes. Remove the foil and bake for another 45 minutes, until the meat thermo inserted in the center of the roll registers a temperature of 77 degrees. Remove the roll from the oven, place on a cutting board and let stand for 10 minutes before cutting into slices.
