Cook the pasta as usual, drain and rinse with cold water. Boil the eggs for about 5 minutes until they are hard, peel and cut into small pieces. Cut the cucumber and bell pepper into cubes, halve the tomatoes. Cut the parsley into small pieces.
Mix the ready-mixed garden herbs with the tomato juice in a bowl. Do not add any water or oil. Add the pasta and the chopped vegetables and mix. Season to taste with salt and pepper. Finally fold in the eggs and parsley.
Tip: You can prepare it a day in advance, but add the tomatoes, eggs and parsley just before consumption.
