Ingredients

  • 1 salad (e.g. lamb`s lettuce and rocket)
  • 4 large mushrooms
  • 1 bunch asparagus, green
  • 10 cocktail tomatoes
  • 1 onion (s)
  • some olive oil
  • some balsamic vinegar
  • 2 tablespoon natural yogurt
  • some herbs
  • salt and pepper
  • 1 teaspoon mustard
  • some parmesan
  • garlic

Instructions

  1. First of all, clean the whole salad (you can really take whatever you want or whatever is on offer) and put it in a large bowl.
  2. Just cut off the woody ends from the asparagus at the bottom and wash it.
  3. Then let some olive oil get hot in a pan (I`ll use my grill pan), cut the onion into cubes and fry in it, add the asparagus and fry it nicely. He can get a little color.
  4. In the meantime, wash the tomatoes and cut them in half, add to the bowl with the green salad.
  5. Make a delicious dressing from olive oil, balsamic vinegar, mustard, natural yoghurt, any herbs, salt and pepper, and if it gets too sour, you can add a little honey.
  6. When the asparagus is already a bit brown, add the diced chamignons and fry them too. Season all of this with salt, pepper and plenty of garlic. At the very end, season with freshly grated Parmesan (but the canned one does too).
  7. Mix the green salad with the tomatoes, the slightly cooled fried vegetables and the dressing.
  8. It goes well with bread or, also delicious, a nice fish from the grill.
  9. Very tasty, quick to make and a great dish for warm days!
