Ingredients
- 1 cup wheat flour, whole grain
- 0.5 ½ cup sugar, white
- 0.25 ¼ cup sugar, brown
- 0.5 teaspoon ½ baking powder
- 1 teaspoon cinnamon powder
- 0.25 teaspoon ¼ salt
- 2 egg (s)
- 0.75 ¾ cup oil
- 1 teaspoon vanilla flavor
- 1 large apple, peeled, diced
- 0.5 ½ cup raisins
- 1 cup carrot (s), grated
- 0.5 ½ cup walnuts, roughly chopped
- 0.5 ½ cup pineapple pieces
- 0.25 ¼ cup desiccated coconut

- Preheat the oven to 170 ° C (convection). In a bowl, mix together the flour, white and brown sugar, baking powder, cinnamon and salt. In another bowl, beat the eggs, oil and vanilla flavor lightly until frothy, then add to the flour mixture and stir in. Add the apples, raisins, carrots, walnuts, pineapple and desiccated coconut and stir in as well. Pour the batter mixture into the muffin pan, filling each cavity about 2/3. Sprinkle a few desiccated coconut on top and bake for about 20-25 minutes. Tip: If you use honey instead of sugar, the muffins will be even healthier.
