Ingredients

  • 300 ml red wine, dry
  • 2 sticks cinnamon
  • 2 clove (s)
  • 2 egg (s), separated
  • 2 tablespoon vanilla sugar, a little more if necessary
  • 500 g mascarpone
  • 3 tablespoon rum
  • 1 teaspoon lemon juice
  • 300 g cake, Dutch breakfast cake
  • 30 g almond (s), sliced
  • 2 tablespoon cocoa powder, real

Instructions

  1. Bring the wine with the spices to the boil, simmer for about 10 minutes and then let cool down.
  2. You can also replace the wine with 150ml apple and redcurrant juice.
  3. Beat egg yolks with vanilla sugar until frothy, add mascarpone and rum (or 2-3 drops of rum flavor).
  4. Beat egg whites with lemon juice until stiff, fold into the mascarpone mixture.
  5. Cut the breakfast cake into finger-thick strips.
  6. Spread half of the cake strips in a tin. Drizzle with half of the mulled wine or juice and brush with half of the mascarpone cream.
  7. Repeat the whole thing and put everything in a cool place for at least 6 hours (better overnight).
  8. Brown the almonds in a pan without fat and leave to cool.
  9. Dust the tiramisu with cocoa and garnish with the almond flakes.
