Noodles with Pumpkin, Mushrooms and Cheese

A wonderful hearty autumn dish – noodles with pumpkin, mushrooms and cheese. Prepare chicken broth, then simmer mushrooms with pumpkin and cheese in broth, boil noodles and combine everything together. A few simple steps – and a delicious dish is already on the table!

Ingredients

  • For the chicken broth:
  • Chicken fillet – 300 g
  • Carrots – 1 pc. (80 g)
  • Bulb onions – 1 pc. (80 g)
  • Salt to taste
  • Noodles – 250 g
  • Pumpkin – 150 g
  • Champignons – 100 g
  • Chicken broth – 300 ml
  • Butter – 25 g
  • Garlic – 2 cloves
  • Sour cream – 2 tbsp
  • Vegetable oil – 2 tbsp
  • Parmesan cheese (hard cheese – grated) – 3 tbsp
  • Fresh parsley – small bunch
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. First, let’s prepare the broth. You can take any part of the chicken for cooking. (We have chicken fillet.)
  2. Fill the chicken with carrots and onions with water so that it covers the food by about 3 cm. After boiling, reduce the heat, remove the foam. Cook the broth for about 40 minutes.
  3. We prepare all the necessary ingredients. We wash and dry the parsley. Parmesan (or any hard cheese) we rub on a fine grater.
  4. Peel the champignons, if necessary, cut into medium cubes. Fry the mushrooms in a frying pan preheated with vegetable oil until golden brown (5-7 minutes).
  5. Finely chop the parsley and peeled garlic
  6. Add garlic to mushrooms and fry for 1-2 minutes.
  7. Add parsley, stir and remove from heat.
  8. Cut the peeled pumpkin into medium cubes. Melt the butter in a saucepan and fry the chopped pumpkin in it for about 5 minutes.
  9. Salt and pepper the pumpkin to taste. Pour in chicken broth (300 ml) to the pumpkin and cook for 10 minutes.
  10. Then add sour cream and parmesan (2 tablespoons) to the saucepan. We mix.
  11. Add mushrooms with garlic and herbs to the pumpkin.
  12. Simmer pumpkin with mushrooms over low heat for about 10 minutes.
  13. Meanwhile, boil the noodles in plenty of salted water according to the instructions on the package.
  14. Add the finished noodles to the saucepan and mix
  15. Noodles with pumpkin, mushrooms and cheese are ready. Serve the dish, sprinkling with 1 tablespoon. a spoonful of grated parmesan (or any hard cheese of your choice).
