For the dough, first beat the eggs with the sugar and vanilla sugar until frothy until an airy, white mixture is formed. Then stir in the olive oil and add the zest of the lemon peel. Then sift the flour with the baking powder and briefly fold in. Finally, add the mineral water to the dough while stirring.
Spread the dough on a greased baking sheet and bake for 15 to 20 minutes at 175 ° C fan oven or 200 ° C top / bottom heat.
For the topping, melt half a packet of butter in a saucepan. Then sift the powdered sugar into the melted butter and stir in well. Now add the lemon juice and mix the topping to a smooth mass. Spread the icing on the cooled cake and let it set.
