For the dough, stir in 250 g butter until foamy, then thoroughly stir in powdered sugar, cocoa powder, salt and 1 teaspoon vanilla. Work in the flour so that a soft, but not sticky dough is formed (add a little more flour if necessary). Knead lightly and refrigerate for an hour.
Roll out the dough between two layers of baking paper 3 mm thick, cut out circles three centimeters in diameter. Place on a baking sheet and bake at 175 degrees for about ten minutes, leave to cool.
