Ingredients

  • 450 g flour, wheat flour type 550
  • 50 g flour, rye flour
  • 20 g potato flour
  • 350 ml water
  • 20 g yeast, (1/2 cube)
  • 1 tablespoon sugar
  • 1 tablespoon oil
  • 10 g salt
  • 1 tablespoon flour, (for pranks + 2)
  • 200 ml water, (for strokes 1 + 2)
  • 50 g coconut fat, (for pranks 3)
  • Staghorn salt, (for pranks 3), 1 spoon tip

Instructions

  1. Knead all dough ingredients into a dough (should not be too firm). Let the dough rise, covered, in a warm place for 20 minutes.
  2. Then shape the dough into a roll and divide into 10-15 pieces. Shape each piece of dough into a ball and place on a baking sheet that has been greased or lined with baking paper. After about 10 minutes, the dough pieces are flattened a little.
  3. Preparation Stroke 1 + 2: Mix flour with a little water and mix with 200 ml of hot water.
  4. Now apply these strokes to the pieces of dough. When the surface of the dough starts to get dry, brush again and allow to dry. The dough pieces have now risen properly.
  5. Time for pranks 3: dissolve the baskin (coconut fat), let it cool down to approx. 50 ° C, mix with deer horn salt. Now apply these strokes to the pieces of dough. Let stand for a moment and put in the preheated oven.
  6. Baking temperature: first 250 ° C, immediately turn down to 200 ° C.
  7. Baking time: approx. 20 minutes.
  8. After baking, the surface of the rolls cracked open, which is what gave them the name spring rolls.
