Ingredients

  • 2 bunches parsley, smooth (large bunch)
  • 3 small tomato (s), aromatic
  • 2 small cucumber (s) (farmer`s cucumbers)
  • 2 lemon (s), add the juice
  • 2 small onions, very finely chopped
  • 3 tablespoon olive oil
  • salt and pepper
  • Coriander, ground

Instructions

  1. Wash and dry the parsley (possibly in the salad spinner) and cut into small pieces with a chopping knife. Wash the tomatoes and cucumbers and cut them into very small cubes, as well as the onions.
  2. Mix a marinade with the lemon juice and oil as well as salt and pepper and season with the coriander spice. Then stir in the tomato, the onion and the cucumber cubes. Only fold in the parsley just before serving, otherwise it will collapse too much.
  3. Goes perfectly with lamb dishes or poultry, in summer an enrichment on the buffet.
