Ingredients

  • 200 g noodles, (Greek rice noodles)
  • 80 g tomato (s), dried
  • 2 large tomato (s), fresh
  • 600 ml vegetable stock
  • 1 large onion (s)
  • 1 clove garlic
  • 40 g parmesan cheese
  • salt and pepper
  • oregano
  • Basil, fresh

Instructions

  1. Chop the onion and sweat it with the garlic and rice noodles.
  2. Now pour in the vegetable stock in sips and stir the risotto again and again so that nothing burns!
  3. After 20 minutes, the pasta is about cooked.
  4. In the meantime the separate Soak tomatoes and cut into small pieces. Hollow out the fresh tomatoes and cut them into small pieces and mix everything under the risotto.
  5. Now season the dish with the spices, sprinkle with parmesan and enjoy!
