Ingredients

  • 1 pack raw ham (prosciutto)
  • 1 head radicchio
  • some olive oil
  • 1 clove garlic
  • 250 g pasta (whole rain pasta in the video)
  • 1 ½ tablespoon balsamic vinegar
  • 2 sprigs thyme, possibly dried
  • some salt and pepper
  • Parmesan

Instructions

  1. Today I`ll show you a very simple, but not everyday pasta dish. The crispy, spicy prosciutto goes wonderfully with the slightly bitter radicchio.
  2. 1. First the prosciutto is cut into approx. 3 cm wide strips and sautéed in a little olive oil in a hot pan.
  3. 2. Remove the unsightly outer leaves of the radicchio, then cut the head in half. Remove the stalk and then cut the radicchio into slices. Then halve the slices again. Wash and spin dry.
  4. 3. Now finely dice a clove of garlic and add to the prosciutto in the pan for about 2 minutes. As soon as the garlic clove has turned color, add the radicchio to the pan.
  5. 4. Now prepare the pasta according to the package instructions, if necessary turn the pan down so that everything continues to fry and nothing burns.
  6. 5. While the pasta is cooking, season the radicchio with balsamic vinegar or white wine vinegar, add the thyme and season with salt and pepper. Then continue to fry lightly.
  7. 6. Before the pasta is poured off, add 2 tablespoons of pasta cooking water to the pan. Then put the pasta straight from the sieve into the pan so that it doesn`t get dry and soak up the aromas of ham and radicchio. Mix everything well, rub the parmesan over it and serve.
