Ingredients

  • 100 g bacon, streaky
  • 750 g radicchio
  • 4 small onion (s)
  • 2 cloves garlic
  • 6 tablespoon oil (cold-pressed aromatic olive oil)
  • salt
  • Pepper from the grinder

Instructions

  1. Clean the radicchio, remove the outer leaves. Quarter the heads of lettuce lengthways and cut out the stalks. Rinse off well and then drain well.
  2. Cut the bacon into fine strips, cut 4 onions into eighths. Finely chop 2 cloves of garlic.
  3. Heat 3 tablespoons of olive oil in a large pan. Add the bacon and onions and stir-fry for 3 minutes. Mix in the garlic.
  4. Put the well-drained radicchio in the pan, fry for 5 minutes over a low heat, turning 1-2 times. Season with salt, freshly ground pepper and 2 tablespoons of olive oil.
  5. Serve hot as an accompaniment to roasted or grilled meat.
