Ingredients

For the burger buns:

  • 200 ml water, lukewarm
  • 5 tablespoon milk, lukewarm
  • 40 grams sugar
  • 1 cube fresh yeast
  • 85 g butter, melted
  • 500 g wheat flour
  • 1 egg (s)
  • 0.5 tablespoon ½ salt

For painting:

  • 1 egg (s)
  • 2 Table spoons milk
  • 2 tablespoon water

To sprinkle:

  • Sesame, unpeeled

Instructions

  1. First mix warm water, warm milk and sugar in a bowl. Warm the mixture slightly and crumble under the yeast cube. Let rest for 5 minutes in a warm place.
  2. Melt the butter in the meantime.
  3. Mix the flour, salt, egg and melted butter with the mixture of water, milk, sugar and yeast. Knead everything into a smooth dough until it has a silky, shiny surface. Cover and let the dough rise in a large bowl in a warm place for 60 minutes.
  4. Tip: I use a damp tea towel to cover it. This will prevent the dough from drying out.
  5. After the dough has risen, fold the dough several times and then shape brioche or buns of the desired size. Let them rise again in a warm place.
  6. Meanwhile, mix the egg, milk and water. Spread the risen buns on top and sprinkle the sesame seeds evenly on the buns in the desired amount.
  7. Now bake the buns in the preheated oven at 200 ° C top / bottom heat for 10 - 20 minutes on the middle rack.
  8. As soon as the buns have the desired tan, take them out of the oven.
