Ingredients

  • 5 salted herring (s), (whole herring or gutted salted herring)
  • 2 bay leaves
  • 15 grains allspice
  • 10 grains pepper
  • 1 large onion (s)
  • 3 pickled cucumber (s)
  • Ground pepper
  • vinegar

Instructions

  1. Soak the herrings for a day.
  2. The next day, fill a large bowl about halfway with water and season with vinegar essence or vinegar to taste. Cut the onions and cucumbers into thin slices and add them with the spices. Cut the heads off the gutted herrings, halve the herrings and place in the bowl. The fish should be covered with water. Possibly add a little more water. The brine should be well acidic so that the fish will be acidic enough later. Let stand in a cool place for about 1 week, then the pegs are well pulled through.
  3. Tip: If you use full herrings, you shouldn`t dispose of the fish roe, but put it in the bowl, it tastes just as good as the expensive one from the fishmonger`s.
