Ingredients

  • 375 ml water, lukewarm
  • 1 ½ teaspoon salt
  • 300 g wheat flour type 550
  • 300 g spelled flour
  • 1 ½ pack dry yeast
  • 80 g walnuts
  • 120 g prunes
  • 1 pinch (s) bread spice mixture

Instructions

  1. First pour the water and salt into the container of the bread maker. Then add the flour with the bread spices and sprinkle with the yeast. I use the whole grain program of my bread maker for this.
  2. When the machine gives the sign to add more ingredients, add the walnuts and prunes. The proportion from nut to plum can of course be varied, but I prefer more plums than nuts.
  3. The dough shouldn`t be too firm, but rather lightly flowing. If it is too firm, you can add a little water. If it is too runny, gradually add a little flour during the kneading phase.
  4. When it comes to dry yeast, it`s best to take a look at the amount of flour: One packet of my dry yeast is enough for 500 g of flour, so I add about 1 1/4 to 1 1/2 packets of yeast to the flour. The recipe is based on a bread of 1000 g.
