Ingredients

  • 1 liter water
  • 2 cubes broth for 0.5 liters liquid each
  • 1 medium onion (s), peel, leave whole
  • 1 pork ribs (wash)
  • 6 medium potato (s), dice
  • 3 medium carrot (s), dice
  • 1 glass cucumber (s) (salt and dill cucumber), grate into strips as with potato pancakes
  • Cucumber liquid
  • 2 tablespoon heavy cream
  • Chop parsley

Instructions

  1. Boil 1 liter of water. Dissolve 2 stock cubes in it, add the onion and ribs and simmer for about 15 minutes with the saucepan closed (remove the foam that could form on the surface of the meat). After 15 minutes, remove the meat and onion again. Add the potatoes and carrots and cook on a medium heat for about 30 minutes until they are soft. Then add the grated cucumber (important: only add the cucumbers when the potatoes and carrots are already soft - the juice of the cucumbers can no longer soften them). Cook the cucumbers for another 15 minutes. Then mix flour and a little water in a cup and add to the boiling soup. Stir immediately and bring to the boil. Season to taste with 2 - 3 tablespoons of cream and parsley. Tip: It is best to go with fresh bread with butter and sliced chives.
