Potato Bread Ingredients

For the dough:

  • Wheat flour – 500 g + 20-30 g for dusting the table
  • Potatoes – 400-500 g
  • Salt – 1 teaspoon
  • Sugar – 1 teaspoon
  • Ground nutmeg – 1 pinch
  • Olive oil – 2 tbsp
  • Dry yeast – 7-8 g

  • Sunflower seeds – ½ teaspoon
  • Pumpkin seeds – ½ teaspoon
  • Sesame seeds – ½ teaspoon

Potato Bread Instructions

  1. Peel and dice the potatoes. Pour potatoes with water and boil until tender (20 minutes).
  2. Drain 230 ml of broth from the finished potatoes, we will need it when kneading the dough. Crush potatoes in mashed potatoes. Let the potato broth and puree cool to a warm state (38-40 degrees).

  3. Sift flour into a bowl. Pour in yeast and mix. Pour in sugar, salt, and nutmeg. We mix.
  4. Put mashed potatoes in the flour mixture, pour in the broth, and olive oil. Knead the dough for 15-20 minutes, periodically dusting the table with flour (if necessary). We form a ball from the dough.
  5. Cover the dough with a towel and leave in a warm place for 30-40 minutes. During this time, the dough will double in volume. Knead the dough again and form a bun.
  6. We make a crosswise incision on top. Leave the dough under a towel in a warm place for another 20 minutes. Put a heat-resistant bowl down the oven and turn on the oven to heat up to 200 degrees, setting the convection mode (blowing).
  7. Grease the bread with water and sprinkle with a mixture of pumpkin seeds, half a sunflower, and sesame seeds. Pour cold water into a heat-resistant form (in the oven). We send bread from potato yeast dough to the oven for 15 minutes. At this time, do not open the oven door so as not to release the steam formed there. Then we open the oven door, release the steam and lower the temperature to 175 degrees, turn off the convection mode. Bake potato bread until tender (20-25 minutes).
