Ingredients

  • 5 medium potato (s)
  • 3 cloves garlic
  • salt
  • 0.5 teaspoon ½ vinegar
  • 1 ½ teaspoons oil

Instructions

  1. Boil and peel the potatoes.
  2. Add the garlic to the potatoes and puree with a hand blender (or potato masher). Add vinegar and salt (I have given a quantity, but I would advise you to taste it) and then smooth it out with the oil so that a homogeneous mass is created.
  3. Serve on starters or breakfast plates.
  4. Skordalia goes very well with other starters or Greek dishes. I recommend white bread as a side dish.
