Potato Kugel

Kugel is a dish of Jewish, more precisely Ashkenazi cuisine. Prepared in the form of a casserole from a variety of products, with the addition of eggs. Kugel is most often based on noodles or potatoes. It can be either sweet or savory, such as potatoes with onions and garlic. The shape is traditionally round, but you can also make delicious potato kugel in a rectangular shape.) Try it!

Ingredients

  • Potatoes – 950 g (peeled)
  • Onions – 200 g (3 pcs.)
  • Garlic – 3-4 cloves
  • Eggs – 3 pcs.
  • Flour – 3 tbsp
  • Vegetable oil – 5 tbsp
  • Salt – 1.5 teaspoons flat (or to taste)
  • Ground red pepper – 0.5 teaspoon without a slide (or to taste)

For the filling (optional):

  • Sour cream
  • Tomato sauce
  • Fresh greens (dill)

Directions

  1.  Prepare the required ingredients. Peel and wash potatoes, onions, and garlic.
  2. In a baking dish (I have a glass dish measuring 20×25 cm), pour 4 tablespoon. tablespoons of vegetable oil and send the form with oil to the cold oven. Turn the oven to preheat to 180 degrees.
  3. Grate the peeled potatoes on a coarse grater. (I chopped the potatoes with a food processor.) Place the grated potatoes in a bowl and cover with cold water. Rinse thoroughly and fold over a sieve. Squeeze out excess liquid from potatoes.
  4. Cut the peeled onions into 4-6 pieces and transfer them to the bowl of a food processor or blender. Add the garlic cloves. Chop the onion and garlic into a puree. Add eggs, salt, and pepper to the onion-garlic mass. Mix thoroughly with a blender.
  5. Add the egg and onion mixture to a bowl of potatoes. Mix everything thoroughly. Add flour and stir again. Remove the dish with vegetable oil from the oven and gently pour 3 tablespoon. Into the potato mass. spoons of heated oil.
  6. About 1 tablespoon should remain in the form. tablespoons of oil – with a brush, distribute it along the bottom and sides of the form. Put the potato mass in a mold and tamp it lightly. Grease the potato mass on top with the remaining 1 tablespoon. a spoonful of vegetable oil. Send the mold to the preheated oven and bake the potato kugel at 180 degrees for about 1 hour, until golden brown on top and soft on the inside.
  7. Remove the finished potato kugel from the oven. Let the potato casserole cool slightly and serve.
  8. When serving, a slice of potato kugel can be supplemented with fresh herbs, sour cream, or tomato sauce.
