- 1 kg potato (s), young
- 3 spring onion (s)
- 3 tablespoon balsamic vinegar
- 4 tablespoon olive oil
- oregano
- mustard
- oregano
- thyme
- basil
- some honey
- salt and pepper

- Brush the potatoes thoroughly. Then cook in salted water and let cool down. Cut into slices with the skin. Then clean the spring onions, cut them into fine slices - also use the greens - and add to the potatoes.
- In an additional container, mix the herbs with vinegar, oil, a little honey and mustard. Season to taste with pepper and salt. Pour the dressing over the salad and mix everything carefully.
